    Today, I took some Plow Creek strawberries fresh from the farmer’s market and threw them in the blender (after rinsing and capping) with some milk and a little sweetening. This made a great refreshing low-fat strawberry shake. Freezing some of the strawberries in advance would make an even more refreshing summer treat.

    Strawberry Cheesecake Bars:

    — Crust —

    Mix:
    1/3 cup margarine
    1/3 cup brown sugar
    1 cup flour
    1/2 cup chopped nuts

    Put into a 9 x 13 pan along bottom and
    sides. Bake 10 minutes at 350º.

    — Cheesecake Layer —

    Put into blender:
    8 oz. (1 cup) cream cheese, cottage cheese, or a mixture.
    1/4 cup sugar
    1 egg
    2 Tablespoons milk
    1 Tablespoon lemon juice
    1/2 teaspoon vanilla

    Mix and pour gently over crust. Bake at 350º until firm (15-20 min.) Set aside to cool. Thicken strawberries with cornstarch and sweeten to taste. Pour on top. Chill until eaten.

    — Topping —

    Wash and slice 1 qt Plow Creek strawberries.

    Crush 1/2 to 1 cup berries, add 1/2 cup sugar, 3/4 cup water. Heat to simmering. Mix 2/4 cup cold water with 3 T. cornstarch; pour into pan, stirring until thickened. Fold into fresh berries and cool.

    With frozen berries thaw 1 quart and drain juice. Add sugar and heat. Stir in cornstarch mixture till thickened. Fold in remaining berries.

    Strawberry Dessert Sauce

    Puree strawberries, then add a bit of orange juice concentrate for sweetness if needed. Chill and use as a dessert sauce, drizzled over vanilla yogurt, lemon cake, or crepes.

    Strawberry Yogurt Dessert

    Combine all ingredients gently. Serve chilled. Each serves six.

    3 cups plain yogurt
    1/2 cup fresh peach slices
    1 cup fresh strawberries (halved)
    honey to taste
    1 mashed, ripe banana
    1/2 tsp. pure vanilla extract

    Banana Strawberry Delight

    (2 portions)

    1 cup buttermilk OR yogurt
    1 banana
    1 tbsp honey—optional
    3 - 4 Large Plow Creek Strawberries
    3 - 4 ice cubes

    Blend all ingredients in a blender until smooth

    Banana Strawberry Delight

    (2 portions)

    1 cup buttermilk OR yogurt
    1 banana
    1 tbsp honey—optional
    3 - 4 Large Plow Creek Strawberries
    3 - 4 ice cubes

    Blend all ingredients in a blender until smooth
