    Spiced Squash Muffins — a great use for a little leftover squash!

    Ingredients:
    2 cups flour
    1/3 cup brown sugar
    2 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp. salt
    1/4 tsp. ginger
    1/4 tsp. nutmeg
    2 eggs, beaten
    3/4 cup mashed cooked butternut squash
    3/4 cup light corn syrup
    1/4 cup butter, melted
    1/4 cup oil
    1 tsp. vanilla

    Topping:
    1/3 cup brown sugar
    1 tsp. cinnamon
    4 tsp. cold butter

    Diredtions:
    In a large bowl, combine the dry ingredients. In another bowl, combine the eggs, squash, syrup, butter, oil, and vanilla. Stir wet ingredients into dry ingredients just till moistened. Fill greased muffin cups 3/4 cup full.
    Combine topping ingredients till crumbly. Sprinkle over batter. Bake at 400 degrees for 15-20 min. or till muffins test done. Cool for 5 minutes before removing to a wire rack. Serve warm.
    For mini-loaf variation: Divide batter between 4 greased mini-loaf pans. Bake at 400 degrees for 22-27 minutes or till muffins test done. Cool for 5 minutes before removing to a wire rack. Slice and serve warm.
