Saturday, at Princeton Farmers’ Market, we will have strawberries (maybe the last of the season), blueberries, black raspberries, and garlic scapes. The market opens at 8:30. We will also have plenty of blueberries at the Peoria Riverfront Market with Plow Creek Bakery (opens 8:00).

Many of you may not know that in addition to the fruits and vegetables we raise here at Plow Creek we also raise pastured pork. What is pastured pork you say? Unlike commercially raised pork which spend their whole lives in indoor confinement our hogs spend their days foraging, rooting, wallowing, and expressing all their natural behaviors. In other words, we raise happy hogs. Not only is raising hogs outdoors more humane, it also produces superior pork which you just can not find in the grocery store. If you have never had heritage breed pork (our sows are Berkshire hogs) that is raised on pasture you are in for a treat. We sell our pork by the whole hog, 1/2 hog, or as a 25 pound pastured pork sampler package. The sampler package gives you a taste of the various cuts of the hog and is a good option if you don’t have a deep freezer. If you have a deep freezer or friends interested in splitting a hog with you buying a 1/2 or whole hog is the way to go as you save money that way. 25 pound Pastured Pork Sampler Pack

Below is an estimate of what you will receive in your 25 pound pastured pork sampler pack. There may be slight variations in the package but this gives you a pretty good sense of what cuts will make up your 25 pounds.
  • 4-5 pounds of bone in pork chops
  • 1 (5-6 pounds) ham roast and/or ham steaks
  • 8 pounds mixture of sausage (combination of breakfast sausage, bratwursts, and Italian sausage)
  • 2-3 pounds ground pork
  • 3 pounds of bacon
  • 1 package ham hocks or neck bones

Individual, one pound packages of sausage made from our pastured pork are now for sale and can be picked up at the farm. We are now taking reservations for our pastured pork that will be ready this winter. We sell our pork by the 1/2 or whole hog. The way it works is that you reserve your hog now and then this winter (likely in early February) the hogs will be brought to a meat locker in Eureka, IL where they will be processed according to your instructions. Our Tamworth (a heritage breed) hogs have constant access to pasture and are fed only non-GMO feed (organically wheat grown from our farm mixed with some certified organic soybean meal for protein). If you have never had pastured pork from a heritage breed hog the flavor difference between this and conventionally raised pork is incredible. In addition to incredible flavor, we also raise our hogs they way they are meant to be: outside, on pasture, and given the opportunity to exhibit all their natural behaviors like rooting in the pasture.
